well the biggest thing i see is that most schools let you do your internships during the summer term if you work something out with them. and if not you could put other classes in the summer so you can take lighter loads. also being at school during the summer may make it easier for you to get your ECs since you won't have the distractions of home. if you decide to stretch it to another year make sure you have a good reason for the adcoms. explain you wanted to be able to enjoy your internship and your business degree would allow you to be able to better run your own practice if you so choose. and also that it allowed you to undertake many different research projects since you had spare time and blah blah blah. you can make any situation work. you just gotta decide which will make college more enjoyable for you.
