I had declared I was double minoring on the AMCAS before being accepted to a school. After some confusion in paperwork and classes I would have to take 17 credits my last trimester to finish one of the minors. Senioritis is already in full effect and I really don't want to take extra class unless I have to. Will the school I was accepted to care?

How about you call that school and ask them? Tell them the truth, that you will be one class short from the second minor and if they would mind if you didn't take it. If they say they would rescind the acceptance, then take the class. If they don't care (which they likely won't), then you will be fine.
