I'm currently taking Calc 1, P/S, and Stats online from a well-respected and accredited university. Will I encounter any future problems in applying to med schools? I plan to take all other pre-reqs in person.

You should be okay. On a lot of secondary applications, you are asked to fill out which prerequisites you've taken and mark off if they were online, hybrid, or in person, and then you can provide a little explanation. Try to take labs in person if possible, but ofc things will change bc of COVID
