My Christmas present to myself was a new oven and fridge.

Burnt the very first batch of 2019 cookies :-D Not used to an oven that isn't 50* below the temp you set it at. Off to a good start. But hoping to be way more motivated about cooking and eating 'normal' meals. Counting on this thread to help!
 
And to start the new year off- white bean chorizo and turkey chili. It’s a little different every time I make it, but it hasn’t failed me yet. Just waiting on the beans to finish cooking!

I am making shakshuka tonight.

The first time I ever made it was with a guy, he found the recipe and bought all the ingredients; it was delicious

The next time I made it was on my own and it came out weird. I didnt save it.

We will see how it goes - taste tests are promising 😀

Had a day of kitchen misadventures this week. As promised, I got out the bread machine, put all the things in it, and turned it on. Everything works except the damn start button! So that was a failure. Later that same evening I tried a new stroganoff recipe, and managed to dice my thumb along with the onion. The knife was so sharp I never felt it, and had no idea until I realized there was blood everywhere. I commented to a friend I was chatting with while it was simmering that the bloody thing had better turn out... literally! 🤣 Unfortunately it was a solid meh, and I doubt I'll make it again. Guess I'll try again next week....

I feel you on the sharp knives. My stepdad has a knife with some crud stuck to it from making dinner earlier this week and I told him I'm not cleaning it because it's so sharp that I once accidentally cut myself with it when my hand barely brushed by it while it was sitting on the counter. Under no circumstances am I handling that thing and applying pressure to the very tip of it near the edge to remove stuck on food.

On the one hand, it cuts like a dream - on the other hand, when you don't clean it right away and get it to where it needs an aggressive scrub down it's like having to clean a loaded gun. No thank you

Sounds like it could be the same knife. I always clean mine right away for exactly that reason - I have no intention of slicing through a sponge and then the tendons on my palm!
 
I made vegetarian chili tonight. I'm glad it is fairly easy because right after I finished I got hit with like gloomy PMS and its only 7:30 but I want to go to bed lol.

On the other hand the chili is very good. I picked this recipe because I noticed it didn't have corn...is it weird but I don't like corn. Added seitan to it for extra protein and I think it was a perfect addition.

So I didn't cook the sauce from scratch but it was soooo tasty I have to share. I poured it over a couple chicken breasts and left in Crock-pot on low all day
For the veg heads, you could like fry some tofu and pour it on top? It's not too sweet and not really spicy but the flavor was on point. No idea if it was vegan. I think we bought it at Costco?

It’s so good!!! I loveeee the madras sauce. It’s the perfect easy dinner! I just dump in some frozen veggies and a can of chickpeas and eat it over some rice.
 
I've seen the Madras Lentils stuff that goes well with almost anything -- rice, veggies, whatever. Ingredients list is smol so not a ton of crazy preservatives.

Or if extremely lazy/tired just throw as-is in microwave. :whistle:

Still working on left overs
Macaroni (Persian Spaghetti)

It is hard to go wrong with pasta but this one is pretty unique in its preparation. The flavors are pretty subtle. I like it a lot.

Many Persian dishes call for copious amounts of meat. For this dish I substituted Quorn grounds in place of it. I also added 3 cloves of garlic because I thought it needed a little more.

Making another batch of southwestern "egg muffins" but sometimes I get tired of eggs. I'm not a huge breakfast fan in general but trying to be better about eating meals and not snacking on junk all day long.

Bonus points if no utensils required to eat and can defrost individual servings.
 
I do breakfast burritos occasionally. Egg beaters, sausage, hashbrowns, cheese, salsa maybe bell peppers and onions all cooked individually then mixed into a bowl, then obviously wrapped in tortillas. I use the soft taco size tortillas and the burritos are usually around 300-350 calories when I'm done. They're better if they are just kept in the fridge. I've frozen them too...tortilla quality suffers a little when you microwave from frozen. My tip is to wrap them in parchment paper instead of saran wrap or foil for easy microwaving.

Recently I bought frozen waffles (the Kodiak brand 'protein waffles' so it feels healthier than eggo) that I toast in the toaster then add butter +/- a little but of syrup or jam.

I just made overnight oatmeal for the first time last week. It isn't utensil-free and couldn't be frozen, but it's fairly easy to dump oatmeal, a little fruit, milk, and a splash of cream in the night before.

Dry cereal? I can't eat/drink very much straight milk so occasionally I'll put frosted miniwheats in a bag to go. Maybe not the absolute healthiest choice, but better than a donut or fast food breakfast I imagine.

I don’t have a recipe for you, but what about some breakfast burritos?

Breakfast is a hard meal cause with the exception of weekends it is usually just grab and go.

For me personally, I love yogurt for breakfast and sometimes switch it up with cereal which I keep stocked at work.

But if utensils are an issue maybe protein muffins? There are lots of protein muffin recipes out there just gotta find a flavor you like.
 
This isn’t a freezer thing, but it is super quick.

Greek yoghurt, sliced Granny Smith apple, cinnamon sprinkled on top. My delicious go to in the morning (if I’m not too lazy to skip breakfast and buy something at school...)
 
I do a smoothie that I can drink in my car. I buy the ziplock type pouches of pre-cut frozen fruit and keep one thawed in the fridge. They're good for about a week, which is about how long it takes me to use a bag. I toss 1/2 cup of the fruit, about the same amount of thick yoghurt (I buy a Balkan one), a scoop of protein powder into the blender, and fill it to the 2 cup line with milk or a milk substitute. Mix for about 30 seconds and you're good to go.

This was my favorite back when I still ate breakfast regularly. Not ideal if you're tired of eggs though lol

I think I'm a decent cook, but rarely do it because I feel like I never have the time (and am terrible at meal planning), but if I do, one of my favorite things to make during the week is salmon in parchment paper. It's so fast and easy, and clean up is also very easy.

I tend to do some variation on this recipe: Parchment Baked Salmon Recipe

Basically: slice notches into salmon fillet, stuff the notches with herbs (I also put pats of butter in alongside), and then put a couple lemon slices on top. Wrap in parchment paper, stick in the oven for like 15-20 min, and it's done. Works really well with fresh basil or dill, but other herbs are also good.

I will sometimes make a spinach rice to go with it, or I will make a lemon/onion/caper/cream sauce thing to put on top of some rice & frozen vegetables. Spinach rice recipe here (actually, this whole recipe is AWESOME and now I'm remembering I haven't had it in a while).

For people who aren't afraid of box mac & cheese...the Annie's shells & white cheddar is really good if you toss in some steamed broccoli & kale, plus a little extra milk/cream & cheese to make more sauce. Nom nom.

Always looking for ideas for stuff that is super fast & easy to make in single servings for one person -- I'm alone most of the week, and don't love leftovers unless it's a specific dish (chicken marsala being one that gets better in the fridge :hungry:). So, any ideas for that would be awesoooome

Dumplings are literally the best food ever and I wish they weren't such a pain to make at home

I knew I should have stayed away from this thread. I hate the effort of cooking but I LOVE to eat. Although, I've now tricked my husband into loving to cook, which has worked out great 🙂
 
My go-to for easy meals is some description of chicken that I toss in the oven. May take longer to cook, but it's not active time and it pretty much always comes out well and freezes well if necessary. Last week I baked a ton of bone in chicken thighs with some ad hoc taco seasoning on them and they came out crispy and perfect and I had a base for lunch/dinner for the week sorted in 40 minutes. I ended up taking them to school in tupperware with spinach and the spinach steamed pretty well when I reheated the chicken in the microwave.

In the past I used to individually freeze cuts of chicken (thighs, breasts, whatever) and pull one out one at a time to thaw in the fridge the night before I needed to make it. It wasn't bad but I am forgetful and that strategy hasn't worked as well as batch cooking before freezing this year.

I also make a ton of a modified version of this stuff and it's amazing and hits the craving for spicy food when I need it. Looks like it should take forever, but if you make a big batch of the rice/lentils ahead of time and keep a large supply of caramelized onions in the freezer at all times (which I do) then it's very quick to make since you just have to mix it and cook an egg to put in it.

Plus, I have a rice cooker and a slow cooker, so preparing things ahead of time is very easy since it's not time intensive to use either of those.

Miscellaneous aside but I like to make large batches of caramelized onions in my slow cooker, then put them in a greased muffin tin so I can freeze them into hockey pucks of onion-y goodness. Once they're frozen solid I take them out and store in gallon bags in the freezer for easy access. They usually end up being about a serving size of onion each.

Meat can be so annoying! Perfectly cooked + reheated = overdone. <sigh>
