Once you are accepted, your courses that you take before matriculation will be between you and the school. I needed a prereq I hadn't anticipated, so I took it in spring & never reported it to PharmCAS. Then again, I was accepted early (end of September) to my first choice, so it was an easier decision what to do in my case.
If the school wants to accept you, they will look over your transcripts and tell you what you still need to do before matriculation. If they don't, I doubt that seeing spring scheduled classes makes a whit of difference either way. There is no "spring update" to PharmCAS anyway. And what will a school that denied you care whether you actually take a course you put down (or whether you take extra courses)?
So I guess what I'm saying is: if, in good faith, you are reasonably certain you will take the course, then put it down. If you don't, or you're really unsure, don't put it down. If you're still not sure what to do, you can call the school and ask whether they prefer to see it on there or don't care.
