I am on my third round of applications, and I am looking into going back to school full time to show that I can excel in a full science course load. I have thousands of diverse experience hours, great recommendations, and a solid GRE. My GPA is the only thing keeping me out of school. I have been taking 1 class at a time online through Colorado State, but it isn't enough, and taking online classes while working full time isn't allowing me to prioritize my schoolwork the way I need to. I have also looked into masters programs, but many require a 3.0 GPA, which I am just shy of. I was wondering if anyone who is or previously was in the same boat has any advice? about schools with great post bac programs or schools that allow post bac students to enroll full time? I know none of the California State schools allow post bac students, so I am looking to go out of state. Any input/advice/ideas would be super helpful! thanks!

Have you considered enrolling in a school as a "non degree-seeking student" and taking upper levels like that? That would be something of an informal post bacc.

If the price is not daunting (~$9k per semester, financial aid/loans are available), I recommend Meredith College's Postbaccalaureate Pre-Health Program in Raleigh, NC. Google for the website and more info. The great thing is that, if you do it right, you can establish NC residency during the 1-2 years before vet school, which will be helpful for admission to NCSU, which is an excellent and comparatively affordable vet school.

You should be able to register as a "non-degree seeking" student like rockatiel said. I'm in a similar boat, had a lower GPA and also needed to take some additional pre-reqs. Last summer I applied to my state school as non-matriculating and have taken 32 credits which have significantly boosted my Last 45 GPA as well as my science GPA. I agree with you that working while taking classes is impossible- I had to cut back to working 25-30 hours depending on the semester, and even so most of my time is spent working or studying, not really much time for fun (but I did that to myself 😉).

Note that, at some schools, as a non-degree seeking student, it can be difficult to get a spot in the classes you want/need, as NDS students often are the last to register for classes. This of course totally depends on the school, the # of students, the size and popularity of classes, etc.

This has been my experience as a post-bacc NDS student as well. Classes as a NDS student have also been slightly more expensive per unit in CA.
