Both. They will both be included into your overall GPA and science GPA
BUT.. adcoms and med schools will see your work in your post bacc.
For example:
Say your undergrad GPA was a 3.1, but you got a 4.0 in the post bacc. It only raises your undergrad GPA to a 3.2 or a 3.33, BUT... they will see that you got a 4.0 in the last year or so, and factor that into your application as well, to show that although you took undergrad classes, you did better in your post bacc.
TLDR; both. They are factored in but med schools will see that your post bacc classes were taken separately and additionally to your undergraduate course work
