Quitting an EC

I have been involved with a community service EC for two years and put in over 600 hours. I included it on AMCAS and wrote about it in many secondaries but something occurred recently and I have lost any interest in continuing with this activity. If I quit, do I need to update all of the schools that I already applied to?

I feel like its somewhat trivial and if it is brought up in an interview I would have no problem explaining why I stopped participating but I don't know if they would have wanted an update prior to the interview.

Then quit. It's a recent occurrence -- and quitting doesn't make those ~600 hours magically go away anyway.

No need to update. Since it was such a significant activity, I'm sure you will be asked about it. Still, quitting it should not affect your chances.
