I am applying this cycle, and I was just recently offered a position with one of my volunteering gigs. As a fellow for the organization, I would be training and overseeing other volunteers while managing the operations of one of the volunteer sites. Since I haven't done it yet, should I mention it on my app in the projected hours or do you think it would better to mention it as an update? Also is this something that would be worth giving the school an update?

As you'd be taking on a leadership role with an organization with which you already have a relationship, you might mention the offer at the end of your narrative about the related activity. But just as you have here, couch it as an offer, since you haven't actually taken on the role yet. Then you can feel free to bring it up in update letters (where allowed), Secondary essays, and interview conversations. Or to say nothing, if other events transpire that prevent you from assuming the fellowship.
