I was waiting for a meeting with my research mentor and picked up the magazine on the table next to me...lo and behold it was a literary magazine put out by University of Oklahoma medical school. This made me both happy and curious: what schools have literary magazines or journals? Or is this a common thing most have already?

Hofstra-North Shore LIJ has a journal, The Narrateur, that publishes writing, photography and other original art. I don't know how common it is, but lots of students and faculty contribute to ours.

Columbia has 2 student run ones: an arts and a science journal. The medical school has a alumni/how is the school doing-focused one that students contribute to but is professionally run, and the hospital has a staff focused one. I know Yale has a great one too.
