So some applications ask you to do a typing test. My question is, are they looking for accuracy (word-for-word correct) or are they looking for the correct information (bullet points such as female, 21, etc).

I would definitely ask the company what exactly they are looking for, but I'd imagine they want to you to type as fast as you can, accurately. I don't know the details of the test, so I can't recommend doing one thing or another.
