Im just curious as to the benifits of shadowing a doctor. I am thinking of shadowing a neurosurgeon and i am wondering if this would help with getting accepted to medical school. I have about 1000 hours volunteer time in the ICU as it is. Should i do it or not? I guess the real question is, is it worth it?

Your volunteer time should be more than enough to show your interest in medicine. A couple of benefits from shadowing would be to see the daily routine of a doctor and maybe obtain a LOR from the doctor.
