I'm a junior Biology major, English minor. I'm planning on taking my MCAT in May. The couple of practice tests I've taken have been slightly above 30.

cGPA: 3.8,sciGPA: 3.7
1 W in organic chem and slight downward trend
1 light semester (12 credits)

20 hours shadowing pediatrician
~4-5 hours a week volunteering at clinic for about 1.5 yrs, recently offered job there (7-8 hours a week)
TA in bio course for 1 semester, paid, 10 hours/week (will do this again Fall 2012)
Leadership role in community service club
Volunteer tutor for disadvantaged young students, 3 hrs a week for 3 semesters
Research in microbio lab for ~1 year, no publications, or posters, only getting some independent work now, also wrote a proposal for summer project funding but rejected this week :(
Also minimal research experience at another lab but only for 1 semester...
ER volunteer in high school starting sophomore year to midway sophomore year in college
Member of cultural club, and perform at events but no leadership role
should have 4 strong recommendations, 1 meh one

I will not be applying to research heavy schools. UMaryland is my top choice and state school. I am kind of worried about my MCAT, not sure if I'm rushing things. I won't apply until I get my score back around the 3rd week of June. I'm also worried about my research experience because I haven't been given independent work until now.
What do you mean by a "slight" downward trend?
Can you get in another 30 hours of shadowing before you submit?
Your research experience is above average for general application purposes, whether or not you had creative input.
If your MCAT score comes in at 31, you should be fine, and possibly even with a 29-30.
