Starting new ECs to include in Update Letters

Here's the general advice: do things (whether employment, volunteer/community service, whatever) because you want to, not because you're already sculpting your update letter. If a school is leaning toward declining your application, it's unlikely another 12 hours of volunteer service will tip the scale for you. If you have a volunteer spirit, I applaud you, but please remember that volunteering isn't currency.
 
I doubt a new EC would make any difference. Update letters that may actually do something usually talk about new awards/honors or some substantial achievement on a current EC, like a presentation/conference/publication.
