Normally, I'd ask AMCAS directly, but since opening day is approaching and we have an extended weekend, I'm hoping someone here can help more quickly:

I've already been told that I need to enter my degree-seeking and post-bac (non-degree) time frames at my university separately, but it just occurred to me then, do I need to print a transcript request form for each time frame, and then have both forms sent together with my single official transcript? Thanks.

1) yes, you have to list both your degree seeking and non-degree seeking time.

2) If they are on the same transcript, you do not need to send two transcripts. The transcript request form is for matching up your transcript with your AMCAS ID, that's it.
