You don't generally use textbooks as primary materials in med school -- each course has its own note-set and lecture notes and that is where you will learn the bulk of the material. So I wouldn't go out and buy ANY until you start each course and talk to upper classmen at YOUR school, and see what you really need. You will need an Atlas for Anatomy, but it probably doesn't really matter which. And I'm not sure what "behavioral science" is -- it is not a course at all med schools (you are missing neuroscience, genetics, etc -- perhaps one of those is what you mean?.
That being said, the biggest names are probably: Physiology = Guyton & Hall, Pathology = Robbins, Biochem = Lehninger or Stryer, Anatomy = Moore's for text, Netter's/Rohans/Grants/Grays/McMinns etc for atlas... But again do not go out and buy these until classes start and it is clear you will need them.

Physio- Guyton&Hall. I had Berne&Levy as well but that is not as readable. Physio BRS is a good supplement
Path- Robbins
Biochem- We had Marks (not bad as a reference but not essential) but Lippincotts is just fine
Pharm- Brody's but so far I am not impressed
Anatomy- Big Moore (great for a reference but I would not try to read it in class again), Rohen and Moses' Atlases- I liked them both. Grant's dissector-required for my school. I may be in the minority but I hated Netter.
Histology- Ross- I liked this one, I also have Wheater's (excellent as well)
Behavioral Science- course packet and BRS
Embryo- Moore- I would not waste your money and I used BRS

I bought just about every self-assessment guide for every class and no, I am not kidding. I come from a non-science background and was not sure what would work for me (still trying to figure that out). But if you want my general observations...

The pretest series is pretty difficult for most courses but useful.

BRS physio- best review guide for physio. A&L was decent as are Guyton&Hall review.

BRS anatomy- mediocre, RR Anatomy- mediocre, NMS Anatomy- mediocre A&L- okay. Roadmap- okay

Roadmap Histo- decent, NMS histo- okay

Embryo BRS- good, HY- decent

Biochem- Lippincott- the standard, the bible for this class, BRS okay, NMS okay

Path- BRS okay (I am waiting for the 2006 edition of RR), Robbins path review- difficult but good

Immuno- for board and wards- decent, BRS- decent, HY- good

Pharm- Lange and lippincott's- excellent, HY- decent, NMS-decent, BRS-decent, A&L- have not looked at it yet, boards and wards- so far so good.

Micro-BRS (also has immuno)- decent, microcards and Lange flash cards- decent

BRS Physiology
BRS Pathology
Robbins Pathology
Lippincott's Biochem
Lippincott's Pharm (really, First Aid has everything)
Clinical Microbiology Made Ridiculously Simple
Moore's "Clinical Anatomy"
Any anatomy atlas such as Netter or Rohen
BRS Anatomy
First Aid for the USMLE
Step-Up
The Underground Clinical Vignettes series is good for adjunct learning.

I haven't found a good book for immunology yet. As you can see from my list, most of the books that I prefer are meant for the boards and do a fairly good job of concisely explaining a topic. Many of the books also have test questions that are eerily similar to many of the questions that I see on exams.
