Some advice por favor:

I am thanked in the text of a publication for my contributions to a study (i.e. I did all of their work), but I am not an author (and was quite mad about this at the time!)

Should I list this as research on an application, and if so, how?
(I have 2 other pubs and 4 presentations)

I'd list it as being acknowledged for the legwork person on the paper. Did you do any writing? If you did, I'd be pissed too if I wasn't mentioned as an author. However, there are lots of lab rats who do tons of work (including statisticians many times) who never get author acknowledgement, but get a nice mention of thanks. It sucks, but not uncommon.
 
Are you still pre-med? Why did you post this in the ENT forum?

Most institutions have clear guidelines as to who should be listed as an author. In addition, many journals now require that the contributions of all authors be explained when the article is submitted. If you really think you deserved to be listed as an author then you should look into this further.
