Alright I know I already posted a grilled cheese hack but this one is better:
Get the pan nice and hot, hot enough to sear the outside. Now sprinkle some of your cheese on the outside face of the almost-ready grilled cheese. Flip it over so the cheese is directly on the pan, and keep there for about 20 seconds. Once the cheese is fully cooked, it'll pull away from the pan, don't worry. Especially if you lubricated it with oil or butter. You get cripsy, toasted , Maillard reaction enhanced cheese.
