I am in the process of applying, I haven't submitted my application yet, I want to retake the MCAT again as my third time, am I able to update my mcat score a couple months later after submitting my application?

I already submitted. It looks like AACOMAS lets you add MCATs after submission. Be aware though, your application will not be complete if you have an "open" MCAT test date. < someone should verify that

so you may be shooting yourself in the foot by retaking because you would be considered by adcoms at an even later date...

The aacomas will actually automatically pull your new score shortly after you receive it.
