I was wondering...if I decide to volunteer while waiting for my app to go through (verification, etc.), can I automatically update hours as my application is being reviewed? I know that you can update your MCAT score after submitting, so I was wondering if its the same for volunteering hours.

AMCAS does not allow one to update involvement in activities through their application system. Your recourse is to let individual schools know about ongoing activities through Secondary essays (assuming an appropriate essay prompt), update letters (where allowed), or during interview conversations (if asked). Since these avenues can't be assumed to be universally available, one's best strategy would be to have competitive levels of longitudinal involvement in critical ECs before pushing the Submission button.
