Volunteering the summer of applying

I have low non clinical volunteering hours now (about 50). Everything else on my app is okay. If I do about 200+ summer volunteering, would it be okay? I am applying this cycle. Can I send an update letter in July?

July is early for an update letter and some schools don't accept them. Your better bet would be to mention it on Secondaries, where the prompt is appropriate.

Side note: ~50 hours of nonclinical volunteering isn't unusual. Don't take this comment to mean you shouldn't beef it up.
 
It would not be considered an update letter... July is the time to be filling out secondaries. You can let them know on your secondaries that you have been volunteering extensively (and even mention # of hours) but I would not expect this to carry the same weight as if it were on your primary app.
