11. Other extracurricular activities - 2 years playing at my universities ultimate frisbee team, although it was exclusively on the B team.

Currently in my gap year. I've been struggling trying to find shadowing, since my state has had a pretty poor handle with COVID19.

Remove Missouri since they accept few non residents with no connection to the state. Howard, Meharry and Morehouse mainly accept applicants from the African American community. You could add any of these schools:
Georgetown
George Washington
Einstein
Quinnipiac
TCU-UNT

I think OP needs to remove Ohio St and NEOMED. Ohio St is statistically out of reach and NEOMED accepts very few non-Ohio residents.
