Please evaluate my chances!

I am a Biomedical Science Major, Biology Minor. I shadowed an OB/GYN during high school and he hired me upon my graduation. I worked as a medical assistant at his clinic for 2 years. I also have OR experience, in which I scrubbed in and assisted in multiple obgyn surgeries. I was also a science tutor for 8 months. I have 300 hours of volunteering at a local hospital, 20 hours at a nursing home. I am a female, Hispanic (Mexican), fluent in both Spanish and English. I have over 300 hours of research and am currently leading a reaseatch project and serving as a coauthor for my supervisor's paper which we will try to get published this coming January. I have already submitted my application this cycle. I was planning on retaking the MCAT this August but I might cancel it. That is another question should I cancel?? I'm afraid schools won't consider my app until they get that score and by then it'll be too late. I am a Texas resident interested in rural medicine, applied to all Texas schools (including DO) except Dell and Baylor. Please let me know my chances, thank you!

Edit: I want to stay in Texas.

Only take August MCAT if you are CERTAIN (not just think) you’re able to score above a 510. Meaning you've done it on multiple practice tests. If I were an adcom, that’s the kind of improvement I’d want to see from a 503. Especially with a GPA like yours to accompany it. But alas, I am also not an adcom. That would just be my approach.

You are competitive for all DO schools. I imagine you will have a good chance for interviews from several TX schools as well, especially those that are mission driven towards rural/underserved medicine.

I would only look into retaking the MCAT if this cycle doesn't play out well for you.

Your research experience will help immensely at TCOM, UTMB, UT Houston, UTSW, and possibly UTSA.

Your Spanish background may give you an edge at El Paso and Rio Grande due to the regions and communities they serve. Those two schools - especially Rio Grande - have a bit of regional bias, though.

Your MCAT is on the lower side for Texas, but it probably won’t be that big of a deal. Your GPA and ECs are solid and I’d expect at least an interview or two. I also agree that you should only retake if you’re sure you can make a significant dent in your current score, say 508+.

I actually think your best chances are at Rio Grande and El Paso. But apply to them all!!
