Currently I'm a PRN tech in a university hospital and I float around in different units. I'm super happy that I'm allowed to witness different things in the ICU or ED for example. I'm interviewing for a nursing home for a part-time position Nursing Assistant and I volunteer in Oncology once a week. I have not shadowed and I'm curious to how I could obtain meaningful leadership experience even though I do little leadership activities here and there(e.g. group projects, speaking up when I see something is not right with a patient and no one is tending to the situation). Is there anymore that I could besides what I'm stating?

I plan on remaining a tech until I graduate college and also volunteering(honestly I might hop around with volunteering once or twice). I also know that I must start my shadowing now as well. Any more suggestions?

I would recommend adding in an activity that you truly enjoy to do leisurely. It's easy to get trapped in the pre-med gpa/mcat/volunteering/EC whirlwind. Adcoms also care that you are a real person with hobbies and interests.
