I am currently going on my second semester starting January 19. I would like to add that I am currently at a two-year college and will be transferring by fall 2016. This is the reason I am saving the harder sciences for year 2 and on. With this schedule, do you think I will be fully prepped in time for the MCAT? Are there any classes I have missed or classes I should take sooner? Also, I am having trouble figuring out what to take my last year of school, any suggestions?

Take the MCAT after your 6th semester.
By then you should be ready in terms of learning the content.

Remember that MCAT's content is not that difficult.
The difficulty about the test is the format and volume of information.
You will need to sit down and prep specifically for the test itself.
