In the cellular respiration section it says "Hexokinase phosphorylates glucose, important because then it can't diffuse out+tricks the gradient"

Can someone elaborate on this? Does it mean that glucose that is phosphorylated by hexokinase cannot diffuse out of the cell?
 
there is also a section on fats that gives a diagram ( triacylglycerides---->monoacylglycerides etc...)

where can I read about this in other materials? I am very confused by this graph

Chad's bio videos. It has something to do with the body breaking down lipids for digestion. I remember being confused by that too, I cropped the diagram from Chad's outline for that particular video.
