I was wondering if I would have to have all the requirements completed
with a grade before I apply or is it ok as long as I have most of it done and plan to finish it before enrolling?
because I still have organic 2 and biochem 1 (required in texas schools) left and won't be able to take biochem 1 before applying next year, since the school only offers the second part next spring
would it be a problem if I apply while I'm taking biochem 1 next fall?

The requied courses must be completed prior to matriculation, although having most of them done when you apply isn't bad idea. Taking biochem 1 after you apply shouldn't be a problem for the schools, especially if it's listed on your "planned courses" and they can see your timeframe for taking it.

Good luck! 👍
