Graduating before taking a prereq?

I am at a huge quarter system school. I don't need the second ochem lab for my degree but all of the med schools I am applying to require it as a pre-req.

Here is the deal: My mom and dad are rather old and I don't want them to go to the spring commencement when over 5,000 people graduate and it is hot and muggy outside where they have to sit in the sun for hours. Instead, I want to graduate winter quarter whern the commencment is not so long and indoors. I don't have any time to complete Ochem lab 2 before I graduate winter quarter so can I just do it as a post-bacc spring quarter? How do you sign up for post-bacc classes? The 2nd Ochem Lab is notorious for blocking students out so would I get screwed out because I would be a post-bacc instead of a soon-to-be-graduating senior?! Anyone done this with pre-reqs?

Edit: I should probably just ask my advisor but she is out of town and in general I get more informed responses out of the SDN masses then I get from her...
 
I graduated in the winter and took OChem II lecture/lab the next semester along with bio II lecture/lab. All I did was register prior to graduating. I never encountered any administrative problems, but it may be different at your institution.
 
Will they let you walk in December and then finish up your degree afterward? My school is a quarter system school too, and they let you do that if you have a compelling reason. One of my friends was going to finish winter quarter and his family wouldn't be able to make it to spring commencement, so he submitted a request and was able to walk in December.

Just an idea.
 
At OSU, you apply to be in the college of continuing education to take post-bac classes. There's no app fee if you went to the school as an undergrad. Then you meet with one of the CEd advisors and tell them what your goals are for taking classes post-bac (very brief). When I did it, they helped me register b/c my pre-reqs weren't in the system since I took them at a different school. I am assuming it would be even easier and you could just register yourself whenever the time came. I haven't registered so late as to miss out on class, although I have missed out on certain sections. I would guess that you would register even earlier, having more credit hours in the system (if that's how scheduling works).
