How do I know where I want to apply?

You should always start with applying to all of your state schools and then use the MSAR to round out the rest of your list. 🙂
 
Get the MSAR. The common advice is to look at the list of schools where your LizzyM score (GPA*10 + old MCAT equivalent score) is within two points above or below the school median. Those are your target schools. You can then also add a few from significantly above and below (reaches and "safeties" if there is such a thing in medical admissions).

For public schools, always check that they interview a decent number of out of state residents. Some are almost entirely dedicated only to instate residents.
