I have reached out to professors for LORs (applying this upcoming cycle) and they confirmed that they'd be happy to write me. I will be using interfolio to store letters. Should I give my letter writers a deadline of sorts? Or just that applications soft open in May and that I hope to complete as soon as possible?

I would give them a deadline in March or April. This gives them 3-4 months and just incase one of them backs out at the last minute it still gives you time to find another professor to write you one.
