LORs from Science Profs when out of school for a few years

If you're in the same boat as me, how have you gone about fulfilling your LOR requirements or explaining your situation to medical schools?

I have one LOR from an upper-year science course, but the rest of my science professors either do not remember me or have retired. I did a Psychology major and took my science courses in the first two years.

I suggest taking another science course (say to boost GPA or whathaveyou), kicking butt in it, establishing a good relationship with the prof and getting a letter from them.
