Are there any medical schools that focus on developing physicians who have an interest in technology? I have read that UC-Irvine welcomes tech-minded students.

The new Carle Illinois College of Medicine at UIUC has a heavy research and technology focus. Definitely seek insight about how the inaugural class that begins this Summer handles the curriculum; after visiting and doing a ton of research on the program, the curriculum is very packed with an extremely heavy research focus. I also am unsure how a hospital like Carle, that is not nationally known and only has four home residencies, is a good fit for a clear technology and research driven program like CICOM. There were definite concerns about the feasibility of the ideas on paper, however, the program may be a good fit for a specific type of applicant.
