A funny thing is that I hate pesto, and Mediterranean food. I really want to go to Greece but I'm worried I'll starve.
Oh hey same. Our shelter med club (one of the main shelter med vets is from Greece) has a trip you can go on if you get picked to Greece to help vet animals there and spay neuter too (I think). But I like basically no Greek food so I didn’t sign up to go 😢

Oh cool I thought I was the only one. There was a volunteer appreciation party by the animal shelter in with that was nicely catered but with Greek food. I filled my plate up to end up only eating cookies and drinking wine because it all tasted bleh.
 
I can't remember who posted it, but I keep going back to that sundried tomato and sausage pasta recipe. I've made a few modifications, and I love it! Thank you!
 
I made a veggie Persian stew tonight (maaaaybe did some research to try to woo somebody)

My changes were adding a handful of kale and using sweet potato instead of regular potato. Havent actually eaten yet but the taste tests during the process were phenomenal if I do say so myself

Edit: yep, it's fantastic.

um i just made this. my hands are permanently stained yellow from the fresh turmeric and i had to do some major research to find tamarind paste and the fresh turmeric but SO WORTH IT OMG
and now that i have tamarind paste and some more turmeric root in my freezer, this will be getting made much more often

(and I’m being lazy and eating it with plain white rice, but I’m gonna make some good rice for later 😛 )

Made this earlier today. Chicken thighs, artichoke hearts, sundried tomatoes, spinach and light mozzarella cheese. Had it over pasta tonight. Super easy and super good.
That sounds amazing... I must try it!

The past couple of nights I've combined seasoned rice (from one of those pouches you microwave for 2 minutes), chicken breast (off a deli rotisserie chicken), chopped up Swiss chard, green onion, (pre-sliced) mushrooms, and garlic. I saute it all together and then cover it and let it steam for a couple of minutes. Quick, easy, healthy, delicious. No pic because I was too busy eating 😉

I'm pretty sure the next time I go to a Trader Joe's I am going to tear that place up buying a bunch of stuff I've had on my "boujee but I want it" list of things to make haha

I live down the street from one but have miraculously managed to stay away for over a month, but this is tempting enough for me to go back and buy some of their goat cheese
 
Throwback to my undergrad years cooking whatever’s in the fridge. I made a burrito (wrap?) out of gnocchi, marinara, kielbasa, and cheddar. I’m so much better than this...

I made an Italian sausage, kale, potato, onion, zucchini, and carrot minestrone soup today! Really yummy! May post recipe later!
 
Can anyone help me not be lazy and cook thing that are easy but delicious? (needs to be gluten free and vegetarian)
 
I may just keep posting what my partner makes :laugh:
He made curry with fried tofu and veggies and it was so delicious 😍
 
Recipe: Brown Rice Bowl with Lentils, Caramelized Onions & Fried Egg

I also make a ton of a modified version of this stuff and it's amazing and hits the craving for spicy food when I need it. Looks like it should take forever, but if you make a big batch of the rice/lentils ahead of time and keep a large supply of caramelized onions in the freezer at all times (which I do) then it's very quick to make since you just have to mix it and cook an egg to put in it.

Plus, I have a rice cooker and a slow cooker, so preparing things ahead of time is very easy since it's not time intensive to use either of those.

Miscellaneous aside but I like to make large batches of caramelized onions in my slow cooker, then put them in a greased muffin tin so I can freeze them into hockey pucks of onion-y goodness. Once they're frozen solid I take them out and store in gallon bags in the freezer for easy access. They usually end up being about a serving size of onion each.
I didn't make this exact recipe but did prepare mujudara tonight and it's delicious! 🙂
 
I have been super boring and making a lot of sandwiches lately. My recipe for a sandwich is whole grain bread, cheese, three slices of mock turkey, avocado, chipotle mayo and honey mustard.

But it's got a lot of protein and nutrients esp with a salad on the side sooo whatever

I figure if it's food, it works. I definitely had half a bag of jalapeno kettle chips for lunch the other day....
 
Ok so I made veggie chili and focaccia chebe bread! Everything is gluten free. The chili is vegan but the bread is not (and could not easily be made vegan).

Chili:
- 1 med size yellow onion
- 2 tablespoons minced garlic
- 2 tablespoons olive oil
- 1 tbs chili powder (I use this: Medium Hot Chili Powder)
- salt and pepper to taste

Chop onion and sauté the above for a few mins then add 1 can each of:
- 8 oz tomato sauce
- 14.5 oz diced tomatos
- 15 oz light kidney beans (drained)
- 15 oz pinto beans (drained)
- 15 oz chili beans (not drained)

Simmer for a good long while. I also added Aleppo pepper bc I like spicy food and 1 tsp of granulated shallots

I wouldve liked to add fake meat but many aren't GF and my bf didn't buy any. But I do wanna try the beyond meat crumbles.

To go with it I made focaccia chebe bread:
chebe - Focaccia Mix 8-pack case 7.5 oz. per package
Follow the instructions and I used tillamook sharp cheddar (of course)
And I sprinted adobo and shallots on top before baking

And then some pixar style ratatouille.

And then green bean casserole when my partner just accidentally placed the cans of beans and mushroom soup next to me while I was chopping veggies.

And now I'm awake at 1am and trying to figure out what to do with the three heads of cauliflower I've accumulated in my fridge over the last couple weeks. Suggestions? I'm tired of buffalo cauliflower.

Mashed cauliflower. Like mashed potato but hEaLtHy or something like that.
But it still hits that mashed tater spot.

I made corn bread last night for a work party (to pair with my coworker's chili)

Very excited to make it in my cast iron. It is def my favorite pan. Also when I was leaving work my foil blew away and Cookie took a bite while I was getting in the car lol
