I am speculating, but I am sure this change was at the behest of the schools.
You are under-estimating adcoms if you think they didn't already notice these details in the past....now they are just asking YOU to do the work of separating them, so they don't have to do it manually themselves.
I doubt there will be much of a change, if any, in how a particular application is treated.
I have worked with adcoms, they SCRUTINIZE every app (usually), and you weren't pulling the wool over anyone's eyes (not implying you were trying to - sorry).
I would hope the schools requested it and VMCAS isn't just going rogue, although their answer of "do what you feel is best" and "call the schools" was predictable but not very helpful in answering my questions. Obviously there are rules and, yeah, I don't want to enter into some action that someone may interpret as deceptive.
Last year I was able to list these hours in "Veterinary Experience" with the subdivision of "Research" so the adcoms really didn't have much legwork to do. I can only imagine that they changed from this format to allow students with non-health science related research experience to get some recognition.
