Just called an equine vet to shadow and the receptionist said they definitely do that! I need to call back to speak to the right person, but it looks promising! And it's a huge hospital, state-of-the-art, and really cool for my first exposure to equine medicine.
Another rave: may have found a legit large animal vet. Need to do some research.
And yet another: I am LOVING my new job. I'm racking up the hours like crazy (forty hours a week job! + shelter 1 day/week + behaviorist 1 day/week). And I'm learning SOOOOO much. I've seen a dog with phenobarb toxicity, a cat with pleural effusion, IMHA, codes, emergency tracheostomies; I've run CBCs and done X-rays and CT scans, calculated drug doses, set up IV fluids, got hugged by a woman who thanked me for taking care of her dog that had three seizures in one day (nearly made me cry), helped with triage calls, and so many other things...and it's only my third week! I am so thankful for this opportunity--I can't even tell you how much I'm enjoying it! And 90% of the people there love to teach. I ask one question, and they talk about why they use this drug instead of this one and the biochemistry of the mechanism, and how the disease affects the body in the dog vs. the cat. AMAZING!
