Since the Supreme Court will likely rule in favor striking down race based admissions, how would med schools be able to use diversity essays? If a student were to voluntarily mention their background as a minority, would med schools still be able to take that into consideration despite not being able to explicitly ask for an applicant’s race? Even seeing applicants during the interview would have the same effect right?

Yes, that’s what will happen. As of now, applicants are segregated and grouped by the race check box quickly before the evaluation. After the Supreme Court verdict, colleges will encourage students to specify their race in the essays and the segregation process will take a little longer because they have to go through the essays to figure out the race. Everything else will remain the same.
