I didn’t get into a class in one of my semesters and ended up with fewer graded units (~ 8 science) + 7 PNP (4 teaching) = total 15. I don’t want to seem like I’m trying to take easy courseloads to increase my gpa. Is this something to worry about? Please let me know your thoughts.

Nah don't worry about it. I had a few terms like this too. If anyone asks, say exactly what you wrote. However, if you've taken more rigorous terms (16-20 credits in the same term that are all graded) in the past or plan to in the future, you have absolutely nothing to worry about.

Ultimately, your GPA, DAT, ECs count are looked at overall.
