Need some clarification for a neurotic pre med. I graduated in May 2015 and have just completed one semester of organic lab (paid 600$ out of pocket), which most schools have as an admission requirement/recommendation. However, the school which I took the lab at splits up Orgo lab into a year long class (1 credit each semester, 2 total). I'm working pretty much full time now, so I'm just wondering if you think I would meet this requirement as technically I completed one semester of organic chem lab, or should I spend the extra $600 and time to complete the "full orgo lab" next semester?

you should contact some of your choice programs and verify with their admissions offices.

most schools I've looked into require a full year of organic chemistry with lab.

To my knowledge you need 1 year (two semesters) of Ochem + Lab for most medical schools

Most of the schools I am applying to are low-mid tier MDs (NYMC, Drexel, UConn) and it is stated on the admission requirements page that one semester + lab or organic is required and the second half is substitutable with biochemistry + lab, or some variation of this.

"Organic Chemistry with lab, 1 semester only (or equivalent)" from NYMC Admissions page

"...an emphasis on an integrated sequence that leads to the mastery of biologically relevant general chemistry, organic chemistry, and biochemistry. This competency may be met with two years of chemistry through the level of college biochemistry. Many possible course selections may be used for this recommendation." from Drexel Admissions page
