If you have space, I suggest making freezer-friendly meals and freezing half (or more).
You can also just cut recipes in half. As long as you're not baking, it generally works fine. If you use allrecipes.com and click on servings (right below the printer symbol), you can change it to whatever you want and it will adjust all the amounts for you.
Anything that's a one-pot meal can probably be pared down easily. If you're not familiar with it already, I suggest shakshuka- it's a middle eastern dish of poached eggs in tomato sauce (often spicy, but doesn't have to be). There are a million recipes for it online and it's very easy to make. You can make it with as many or as few eggs as you want, and either cook the eggs in sauce on the stove or put the pan in the oven.
As for good recipes, I really like
www.budgetbytes.com (really easy, cheap, yummy and usually healthy food with step-by-step photos),
www.seriouseats.com (often more complicated but not always. very interesting if you're into the science of cooking or just like details), and
www.minimalistbaker.com (all recipes are either one pot, 10 ingredients or fewer, or take fewer than 30 minutes to make). I have a bunch of recipes I've saved but I mostly browse Budget Bytes or google for what I want when I'm in search of something new.
