Feel like I'm screwed on LOR's

So I graduated in May and will be applying for the 2021 cycle (2 gap years). I currently have 3 LOR's:

1 science professor whom I've TA'd for and received an A in both courses I took with him.

My research PI (psychology which AFAIK is not considered "science" in terms of med school), whom I did research with for one year. However I think it will be a strong letter because in addition to my research responsibilities, I created software for the lab that helps with data collection / analysis and improves the overall efficiency of some of the grad students projects.

I served as peer mentor and worked with students who struggled academically. My supervisor / instructior, who is considered staff not faculty, offered to write me a letter. That being said, there was a class component that was graded for credit. While I was able to show some of academic abilities when working with STEM students, most of the work I did was helping students with more fundamental skills like time management and study habits. This letter may be more of a character letter, however I still think it will be helpful as they will be able to cover the pre-professional competencies.

I will also acquire a committee / composite letter from my school's pre-med office when my application date gets closer.

I know that typically 3 LOR's is the minimum, 2 from science faculty, and 1 from non-science faculty. I don't feel that great about my situation given that psychology isn't considered science, and that my 3rd letter isn't technically from a faculty member. That being said, I have 1 year (not counting the year following the 2021 cycle) to get more letters. I will also be shadowing a few doctors during this time. How do you think my current set of letters will affect my application and what do you recommend doing.

Stats:
3.83 cGPA, 3.80 sGPA
515 MCAT

If you have a committee letter all of this usually doesn’t matter!

You're not 'screwed' by any means. These all seem like good letters that can be incorporated into the committee letter. And even if you were to forgo the committee letter (not recommended), you still have ample time to gather additional science LoRs.

Also, ask for your LoRs now while their memory of you is still fresh, unless you plan on continuing to work with them during your gap years (still let them know that you're planning to eventually apply so they can take notes in the interim).

What letters does your committee require to produce a letter supporting your candidacy? So long as you fulfill those, in the vast majority of cases, you don't need to follow the LOR requirements of individual med schools (and their websites state that). A committee letter and packet count as one LOR with AMCAS. You can still submit additional letters besides that if you have them, but need not.

This is important to know, I think my committee required me to have supporting letters from 3 faculty members I took STEM related classes with. Loudpacks you should find this out, it's best to have these letters that the committee requires written as close to when you took courses with these faculty members as possible so they can write the best letter.
