I am interviewing next week and I was wondering how many interviews there are? Is it just one or two? Also this may be a dumb question, but what do they mean by a self-guided tour?

Just one interview with the faculty. After you’re done with your interview day, they’ll let you walk around campus and go to other buildings. That’s basically the self-guided tour. They’d explain to you more on that day. Good luck with your interview!

Usually it means that they aren't offering you an interview at this time but they're not rejecting you. You may still receive an interview at some point.
