Do you believe I have too many reaches on my list and/or not enough "safety" schools? I also was hoping my extensive hours of community service and research, upward trend and a higher MCAT score would offset my GPA a bit?

Yes, you have too many reaches. A high MCAT somewhat compensates for a lower GPA. Those top 20 schools have plenty of applicants to choose from with your MCAT, ECs AND a GPA of 3.8+.
