So, I'm wondering what the protocol/standard/nice thing to do is regarding receiving an admissions offer and attending future interviews.
A. if the acceptance isn't your first choice, going to more interviews definitely makes sense.
B. But if you get into your first-choice (or top choice of those you've been invited to interview with) shouldn't you just take it and let the other schools know you no longer want to interview with them? I think a lot of schools are limiting the number of students they take this year anticipating a lot of state budget cuts for funding (public schools anyway)---maybe letting them know you aren't interested anymore would lead them to invite a few more people/give them a chance.
C. Or should you just go to all of them regardless of admission to one of your top choices?

This is my understanding from talking to an undergrad adviser who is very familiar with the Clinical PhD admissions process: If you receive an admissions offer from a school and you're sure you'd rather go there than schools where you have upcoming interviews, then definitely cancel all interviews at those schools that are lower down on your list. It will save you time and money, and it will allow the schools to offer interviews to other applicants who might very well accept an offer of admission. However, if you aren't sure where you want to go, it's fine to hold onto an offer of admission while interviewing at other schools.
If you receive more than one acceptance, as soon as you've decided which school you prefer, turn down all the other offers as soon as you can.
