I'm going to copy and paste a PM that I sent to someone else about interviews:
-----------
Compared to many other schools, Kingsville's interview is a pretty laid back atmosphere. It's still an interview, so it's a rather stressful by nature, but whereas some places feel like a pressure-cooker environment, Kingsville leans more towards the making-people-feel-comfortable side of things.
The type of questions that you'll run into during interview are usually pretty generic. You will probably get questions like, "Why do you want to be a pharmacist," and "What makes you specifically interested in the COP at Kingsville." You might get more in-depth questions like, "What do you consider to be your greatest strength/weakness" and those sort of open-ended questions, but don't expect any technical/educational questions. You should certainly spend time to roll in your head how you want to respond to those sort of questions. Though they seem like straightforward questions, it takes time to come with a response that feels smart yet rolls off the tongue naturally.
You don't need to worry about anything along the lines of "How do chiral shapes affect biological systems?" You're not going to get quizzed on what you should know from class. Those kind of questions do not happen.
Always keep in mind that the point of the interview is to better understand the personality, behavior, and communication skills of a student. So, while interviewee feels the need to say something smart and thought-provoking with every sentence that comes out of their mouth, it is equally important to communicate in a straightforward and easily understandable manner.
In an interview room, once you know what you want to say, the most difficult part is going to be formulating a response that is appropriately descriptive yet concise. You only have 30 minutes for your oral interview, and those 30 minutes will fly by before you can catch your breath. Don't get too verbose or abstract in your answers. Don't ramble on or get too wordy. In the back of your head, you're probably worried about half-baking your answers by not saying enough. But, between the preparation that you've done and the adrenaline that you're feeling, you're much more likely to say too much than too little. So, be sure to practice what you would say to the standard questions like "Why do you want to be a pharmacist" and "Tell us about yourself." Work on putting ideas into words and then hitting everything you want to say, and then work on shortening parts of your response while keeping the essential details.
Then, on interview day, try to dial down your stress level a notch because the interviewers want to be able to assess your personality and your ability to communicate. Take a few moments to pause and ponder each question. A moment of silence isn't going to kill you (if anything, it will make you seem more natural than reciting a preformed response). And, take a normal sized breath before you start talking so you don't speak too quickly. Sometimes, people start talking while short on breath and then it looks like they're choking on air, and that's weird. You don't want to look weird.

ah sweet!
Also to others, this is a completely random and I guess somewhat inappropriate question but I'm turning 21 on that day, so I was wondering if there was any sort of good bar in that area! I want to celebrate with a drink or two since I'm going to get there by 8pm on the previous day.
Honestly, Kingsville is a pretty small place. You're not going to run into too much around here. If you would like a decent burger place where you can also get a beer or a few small drinks, you could try Big House Burgers. The address is 2209 S. Brahma Blvd and it's on the corner of a strip mall (behind this other place called Taiwanese Family Restaurant). The burger's are pretty good, and you could find some generic beer. It's also a pretty good place to catch a game on TV. The service can be pretty slow, though, and ultimately, it's more of a burger place than a drinking place.
There's also the Country Luau (people just call it the Luau though) on 115 University Blvd. That's more drinking-oriented, but it is not going to compare to the college town places that you might find at, say, Austin.
And, if you like chain restaurants, there's a Chili's restaurant off the highway on the south side of Kingsville. The address is 2727 South U.S. 77.
(Edit)
But, I agree with PharmB. If you want to get out and really do something, I would go to Corpus Christi or somewhere else.
