No one can chance you w/o a MCAT. As far as ECs, you are ok for Research. Shadowing is good, dont shadow anymore. Try to do more community service, maybe hit a total of 100 hrs min, same with clinical experience.

I would recommend relaxing. Also student shadowing to become a CNA is sketchy
