I agree that you’re over analyzing.
One thing that came to mind about the interrupting is that can be regional. Where I grew up, interrupting was a normal part of conversation. We all interrupt each other constantly when talking and no one thinks twice of it, it's just how we communicate.
Moving to a different part of the country where that was considered rude was an adjustment. Something that was never a second thought before was suddenly something I had to be more aware of so as not to offend people. It’s possible your interviewer just came from a place where it’s totally accepted and part of how people talk. Or as the other poster suggested, was just trying to get to the best juice of the interview. The Mayo interviews are pretty short compared to others so probably trying to squeeze as much out of the time as possible.
As for #1 - I think that’s extremely common. They ask us to project into the future but things change. People get new jobs and have to discontinue other things and that’s just life. I wouldn’t worry.
