It says we can't use AP classes, but we need to take higher level courses in the subject to satisfy. Would engineering classes (like mechanics, etc) count for physics? And would thermodynamics in engineering count as chemistry? Also, could I just say I will take pchem or analytical chemistry my senior year, and get by the requirement?

I'm gonna go with no on the first two. Those are both classified as engineering classes, not physics or chemistry. Also, all acceptances are provisional. If you do not complete the require courses, you will not be allowed to matriculate. I have a friend who applied to Vandy two years ago and had to take an additional chemistry class during his senior year to be allowed to matriculate there.
 
I would call the admissions office for this information. They can be specific, and let you know which classes will suffice. I wouldn't be surprised if the engineering classes cover the physics class, though I somewhat doubt thermodynamics would excuse you from chemistry. Just call and talk to them.

Also, yes you can say you're going to take the classes senior year, but you actually need to take them--I'm assuming you were indeed planning on it.
 
I applied while missing a chem credit (They said orgo didn't count, so aside from AP I had only taken Biochem which was only 3 creds). I had asked my premed advisor, and he said to apply anyways, so I did and got an interview.

I was already graduated and working while I was applying, so it's doubtful they thought I would take it before matriculating if I was accepted (I was waitlisted, the South and I don't really mix).

Best route is to ask them, there may be some little leeway here and there, wouldn't hurt to ask.
 
Last year, when I applied, I had the same problem. I had credit for an AP Physics course and was not planning on taking another upper level physics course. I talked to admissions and they allowed my physical chemistry course to count as an upper level physics course to replace my AP. Just email the admissions office. They are very helpful and friendly. 🙂
