I agree with
@SkiOtter. NCSU is easily one of the most competitive schools for OOS applicants. Your GRE scores aren't
bad, but I would try to aim for a bit higher if possible. My collected data indicates that, for the previous year, the average GRE scores were 156 V and 154 Q, but that includes IS and OOS, and presumably most OOSers were above that. I don't think that it would be impossible or anything with where you are at right now if a retake will be that much of a hassle for you, but scoring above those averages might secure you an even better fighting chance at that school, which would be ideal since it's almost certainly your cheapest option once you account for the residency status switch.
Speaking of, your GPAs are excellent. Which will help you tremendously. So good job there. Experience is a little lacking, but in tandem with your nearly immaculate grades is probably enough.
The cosplay stuff sounds really cool and will give you a bit of a unique edge. I have several friends who are into that, as well.
Personally, I think that your chances of admission to at least one of those schools are quite good, especially if you do retake the GRE and can diversify your veterinary experience a bit.
